Tony's Passover Class

I love cooking food for Passover and I can't wait to share some of my tricks in a hands-on class and family-style luncheon demonstrating dishes for a new-American Passover seder dinner.  

Like many of you, I grew up eating traditional Ashkenazi dishes from the kitchen of a grandmother -- in my case, my Baba Hannah. I always looked forward to her brothy matzo ball soup, classic tomato-based braised brisket, chunky apple-walnut charoset and even the gefilte fish out of a jar. But there are other traditions that we seldom see or experience around here. At Craigie we've been cooking Passover-themed dishes since the good-old days over on Craigie Street.  I used it as an opportunity to explore the flavors of other Jewish traditions: the Sephardic flavors from places like Morocco, Yemen and Iraq. They are of their own tradition, even if the food didn't look or taste like the Eastern European foods that most American Jews are more familiar with.

In this year's Passover class we will learn how to make some of this terrific, vibrant food so you can introduce these exciting flavors to your Passover seder this year. And we will have a special guest!! Spice guru extraordinaire Claire Cheney, owner of Curio Spice will join me to talk about some traditional Sephardic spice mixes. We are big fans of Curio Spice's remarkable quality and her amazingly flavorful and vibrant spice blends. Claire will be here for you to sample some of her original blends. You will also be able to purchase them directly from her at the class. We especially love her Mazeh Persian spice and her wild Za'atar!
Join me and Claire as we roll up our sleeves and learn how to make some traditional Passover dishes, but from the oldest culinary melting pot in the world -- Israel!

 We will learn how to make a Passover Seder meal with Middle Eastern Spices, fruits and grains and bring a new look, feel, aroma and taste to your holiday table.   We will also talk about some fabulous wines to pour, and we'll feed you a 3 course family style lunch full of Israeli flavors.
